Abstract
This chapter discusses the diversity of fatty acid composition, designer oil crops (i.e. soyabeans and rape), domestication of new crops, biosynthesis of potential industrial products, breeding for industrial oils, segregation of novel fatty acids from membrane lipids, the use of biopolymers and the chemical and biotechnological transformations of industrial oils. The key targets for future industrial oil crops, tailored oil composition, high oil yield, use of co-products, management and processing of industrial oil crops and future prospects are also highlighted.
