Abstract

Sensors are paramount in the food industry. Nanotechnology intervention has further improved the performance of traditional biosensors. Miniaturization of sensor devices has improved the sensing technology. The unique properties of nanoscale materials, particularly optical, electronic, and chemical properties, have become integral to nanodevice-based robust sensors. The quality of food and hidden contaminants in the food products have been tightly regulated using nanobiosensors. It is extremely difficult to find contaminants in the food products. The extensive use of pesticides and other contaminants in food have caused worry among the general people. So, there exists the necessity for development of quick, inexpensive, and sensitive sensors. Enzymatic nanobiosensor technology offers an immediate and affordable solution for food safety. For a variety of pesticides and food-borne pollutants, enzymatic nanobiosensors offer ultrasensitive and rapid detection. Recent developments in the enzymatic nanobiosensors used in the most sought-after food industries have been discussed. The present chapter highlights the gamut of enzymatic nanobiosensors for food safety. In addition, the different strategies used for designing an enzymatic nanobiosensor are also addressed.
